The setting couldn't be more beautiful and you're bang on the North Coast 500 route, so cyclists will be off early. Fuel up with one of Jo's magnificent breakfasts: homemade granola with ginger, honey and whisky, fruit compote in season, organic yogurt and porridge, then bacon, tomatoes, free-range organic eggs from their hens (when they are laying), locally smoked salmon, home-baked bread or sourdough. Vegetarian and vegan alternatives will be equally delicious.
The dining room doubles up as a sitting room and has lovely views, lots of books, a comfy sofa and a wood-burning stove. Settle here to plan your day, or out in the garden where there are lots of birds to watch and the northern lights to observe when you're lucky. There are grand walks from the door, looking out for eagles and sea eagles.
Return to homemade cake, supremely comfortable beds and gleaming bathrooms with Faith In Nature soaps and lotions. A very restful place.
